The Chef of the Mercado Central

Chef

Every morning starts at the market. Our chef shops the stalls of the Mercado Central, knows the growers by name and cooks the season — and shares both the market and the kitchen with our guests.

The market at opening time

The Mercado Central is one of the largest fresh-food markets in Europe, under a modernist dome of iron, glass and tile. Our chef walks it early, when the produce has just arrived from the huerta and the boats: artichokes and citrus in winter, tomatoes and stone fruit in summer, red prawns and fish from the coast all year.

With them, the market becomes a lesson in the Valencian table: what is in season, how to recognize it, and what a local cook would do with it.

From the stalls to the table

What you choose together often ends up on the plate later that day. The time with our chef can be a market morning followed by lunch, or a longer evening at a tasting menu where the produce of the morning returns transformed.

Time with our chef is part of our Valencia food tour and of the chef’s table evening.
